I've been bed ridden for days and yesterday was the first day I kind of had my appetite back. Do you know what I woke up craving? A coconut cupcake. While I'm admittedly a sugar addict, I didn't have enough energy to sit up in bed let alone go buy a cupcake.
Today I was still craving that stupid cupcake but still didn't have enough energy to get to the cupcake shop. Luckily I ended up remembering a little 'dessert snack' recipe that I came up with a while ago that satisfied the craving and required very little energy on my part (and is much easier on the waistline than the cupcake). And, since I obviously have no style related photos to show you, I thought I would share this quick recipe with you.
For those of you who think of this as more of a style blog and have no interest in seeing two recipe posts in a row... I'm sorry. Right now I'm wearing a grey Nike hoodie and black Champion sweatpants, hopefully that inspires you ;)
There are only three ingredients needed for this snack (or you can call it dessert) so it's super easy. Normally I just throw the toppings on, but I thought I'd measure it out this time so I could let you know the calories in this, for anyone who cares. In other words, don't feel obligated to measure anything if you don't want to!
Coconut S'mores
What you'll need (makes 2 servings... or one depending on how hungry you are!)
4 Graham Crackers
2 Tbsp Frozen Cool Whip (Softened)
1 Tbsp Coconut.
Top each Graham Cracker with 1/2 Tbsp Cool Whip and then sprinkle 1/4 Tbsp of Coconut on top.
That is it! Occasionally I would add little bits of chocolate to it but I couldn't taste it enough so it wasn't worth it.
Calories: For 2 s'mores - 86.5
